  1. Preheat oven to 350°F and grease and flour two (8 1/2x4 1/2-inch) loaf pans.
  2. In large bowl, mix the flour, cocoa, cinnamon, baking soda, baking powder and salt.
  3. In a separate bowl, mix together the sugar and eggs until well blended. Add oil and vanilla and mix well. Stir in the grated zucchini.
  4. Combine with the flour mixture, and stir until moistened. (Add chocolate chips, walnuts, pecans anything you want to be creative!).
  5. Bake 55 to 60 minutes or until a wooden skewer comes out clean. Cool in pans 10 minutes, then remove and cool completely on wire racks.
