"I make my own "chips" and load them up with cheese, bacon and green onions. My family loves these."

  • Clean and scrub potatoes. (leave skins on) Slice 1/8 inch thick.
  • Place in bowl of cold water for 30 minutes or longer.
  • Drain well. Season with season salt, garlic powder and pepper.
  • Add flour and toss to coat, making sure to separate slices.
  • Fry in hot oil until lightly brown. Drain on paper towel for a minute.
  • Sprinkle with more salt. While hot sprinkle the cheese and bacon over the top of fries.
  • Return to hot oven only until the cheese is melted. Sprinkle with green onions.
  • Serve hot.

  1. Delicious! It's like a twice baked potato casserole. We cooked the bacon on a baking sheet in the oven. Then (without washing it), put the cooked potatoes on it for more bacony flavor. We used Recipe #330103 for the spices. The only thing we would suggest is to make individual serving size piles of fries as it was difficult to serve (everything wants to go with the spatula). We could also see doing this recipe in a casserole dish and layering the ingredients. We served it with sour cream. Made for TYM tag game. Thanks for sharing the recipe. :)

I am a 55 year old female. Born and raised in the south. I am married and have three grown children and one granddaughter and my best friend Chewy,a toy yorkie. I love Carolina basketball. camping and reading. I have been cooking since I was able to reach the counter, cooking my first meal at the age of 10. My mother and grandmother taught me the southern ways. I don't measure much (neither did they) so if you try my recipes, take that into consideration. I am a three time cancer survivor and hope to finally get my recipes together in one spot for family and friends before my luck runs out. Hope you and your family enjoys them as much as mine has.
