- 1 1⁄2 cups butter, softened
- 1 cup brown sugar
- 1 cup white sugar
- 2 large eggs
- 2 tablespoons vanilla
- 1⁄2 teaspoon almond extract
- 4 cups plain flour, sifted twice
- 1⁄2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 1⁄4 cups pecans, almonds or 1 1/4 cups walnuts, chopped
directions
- Cream butter and sugars. Add eggs, vanilla and almond extract. Mix well.
- Sift together dry ingredients. Add to butter mixture.
- Stir in pecans or desired nuts.
- Shape dough in log. Wrap with plastic wrap. Refrigerate for 4-8 hours.
- Slice into half inch slices or less.
- Place on ungreased cookie sheet.
- Bake 375 degrees for 7 minutes.
- Note: dough may be frozen for up to 3 months. Slice while frozen and bake.
