Debbie's Pumpkin Bars

"Another recipe from a former co-worker. These bars are delicious, but are certainly not for the diet-conscious (see version #2 for a more healthy option)! I have made them many times (both versions) and they are always a hit."

  • Preheat oven to 350F degrees.
  • Grease& flour 10x15 jelly roll pan; set aside.
  • Beat sugar, oil& eggs in a large bowl.
  • Sift dry ingredients; add to egg mixture, stirring well to combine.
  • Add pumpkin & nuts.
  • Pour into prepared pan, and bake 20-25 minutes or until done.
  • Cool thoroughly; frost with cream cheese frosting, or serve with Cool Whip.

  1. i tried a healthier version. less sugar, spelt flour and used just the whites of the eggs. they were good without the frosting. took them to a church potluck.
     
  2. Made these for a Halloween treat in my children's classrooms at school. Added chocolate chips to the batter before baking and sprinkled with powdered sugar before serving. Yummy and everyone loved them - eve kids who said they "hated" pumpkin!
     
  3. WOW! I love these! I substituted 1/2 cup mini chocolate chips and 1/2 cup chopped walnuts. I also used egg beaters instead of 4 whole eggs and they were outstanding.
