Decadent Berry Chocolate Granola

"Granola with vanilla yogurt has become a breakfast favourite around here. This version is maybe a bit too sweet for everyday, but it makes a very special treat! Now that my children are in school, I tend to use seeds rather than nuts and keep it in big granola clusters to make it easy to send in lunches."

  • Preheat oven to 325 degrees F.
  • In a large mixing bowl, stir together the oats, nuts, seeds, brown sugar and salt.
  • Combine the the oil, honey, water and vanilla. Add to oat mixture and toss until well combined.
  • Spread the mixture evenly on a cookie sheet. Press lightly.
  • Bake for 20-30 minutes or until lightly browned. Stir occasionally if you like, but if you want clumps/clusters, DO NOT STIR at all!
  • Allow to cool for a few minutes, then transfer to a bowl and very gently fold in the chocolate chips. They should melt slightly in the warm granola.
  • Depending on the size of berries you use, you might prefer to chop them into smaller pieces before adding them. If you want the chocolate to coat them, stir them in while still warm; otherwise cool completely before add in them.
  • Store in an air tight container for up to two weeks (if it lasts that long!).
