Decadent Berry Chocolate Granola

- 5 cups oats
- 1 cup slivered almonds or 1 cup sunflower seeds
- 1⁄4 cup flax seed
- 2 tablespoons chia seeds
- 1⁄4 cup brown sugar
- 1⁄4 teaspoon salt
- 1⁄3 cup oil
- 1⁄3 cup water
- 1⁄3 cup honey
- 1⁄2 teaspoon vanilla
- 1⁄2 - 1 cup chocolate chips or 1/2-1 cup mini chocolate chip
- 1 1⁄2 - 2 cups dried raspberries or 1 1/2-2 cups dried strawberries, etc
directions
- Preheat oven to 325 degrees F.
- In a large mixing bowl, stir together the oats, nuts, seeds, brown sugar and salt.
- Combine the the oil, honey, water and vanilla. Add to oat mixture and toss until well combined.
- Spread the mixture evenly on a cookie sheet. Press lightly.
- Bake for 20-30 minutes or until lightly browned. Stir occasionally if you like, but if you want clumps/clusters, DO NOT STIR at all!
- Allow to cool for a few minutes, then transfer to a bowl and very gently fold in the chocolate chips. They should melt slightly in the warm granola.
- Depending on the size of berries you use, you might prefer to chop them into smaller pieces before adding them. If you want the chocolate to coat them, stir them in while still warm; otherwise cool completely before add in them.
- Store in an air tight container for up to two weeks (if it lasts that long!).
