Deep-Fried Catfish (Food Network)

"This is SO tasty and crispy! Be sure to use Kosher salt, or only 1 tsp if using regular salt. If you don't like catfish, try tilipia or snapper. This is from Food Network, Big Daddy. Hope you enjoy!"

directions

 • Preheat a deep-fryer or pot to 350 degrees F.
 • In a large bowl, add the flour, cornmeal, baking powder, salt and cayenne and whisk to combine.
 • Whisk in the beer, being sure to remove any lumps.
 • Cut the catfish fillets in half lengthwise to make 2 strips. If desired, cut into bite-sized pieces.
 • In a small bowl add the salt, pepper and granulated garlic.
 • Dredge the fillets with the salt mixture.
 • Dip each strip in the beer batter and add to the fryer, a few at a time, moving them around so they don't stick.
 • Fry until brown and crispy, about 3 to 4 minutes.
 • Remove from the fryer to a serving platter. Repeat with the remaining fillets and season the fish with lemon juice.

 2. We had a fish fry last night and I thought he was bringing home Catfish, because I'm from Texas and that's all I've ever had when we fry fish, but he brought home Alaskan Cod and Halibut....I made the batter (without Kosher salt) and it was great!! I'm saving this recipe for my next fish fry!! Thanks for posting this recipe!

Hello all, being from California, I can honestly say I am a foodie. You can walk by construction workers here and hear them saying things like, So I used some fresh garlic and olive oil, then threw the rest into the pan to sautee. LOL I love all kinds of food, and trying to eat healthier as I get older, but still indulge in the occasional deep-fried food or sweet.
I LOVE this site! I have 3 or 4 other food sites such as Epicurious and Food Network, but I always come back here! The ease and all of the features just can't be beat.
Thanks Zaar and I look forward to participating more.
