  • Mix all ingredients in food processor or blender.
  • Mix until thoroughly blended (about 2-4 minutes).
  • Transfer into flavor injector and inject turkey in several places.
  • Deep fry turkey as usual (about 3 minutes per pound).

  1. A very excellent injection recipe for deep fried turkey. I used minced garlic and an immersion hand mixer to get the job done. Turned out perfect. My neice who puts gravy on everything mentioned that the turkey tasted so good, it didn't need gravy. Best complement ever. This one is a keeper!
     
  2. I used to buy the creole seasoning Cajun butter marinade for injecting deep fried turkeys. It became harder and harder to come by. So last year I tried this recipe. It was a hit. I didn’t want to clog the injector with garlic so I used powdered. The taste came out fantastic but it left some grit. So this year I will just jarred minced garlic. Hopefully they’ve had time to soften up and blend easily. Delicious!!
     
  3. Wow, probably will never by store bought again. Very very good. I used chicken broth instead of OJ for a duck and it was the best duck ever. Also used garlic powder instead of cloves so I did not need a blender. Thanks for posting. Update: Works great for beer can chicken also and the leftover sauce freezes well for next time.
     
  4. I have to admit, I was very skeptical about this one. Having fried many turkeys over the years, I've always used a butter based recipe. This OJ based injection was a HUGE HIT! VERY moist with a great but not over powering flavor. A professional chef, who I had never met before yesterday, did the carving for me (something I hate doing). He could not get over the moistness & flavor. I did double the recipe for an 18 lb bird and that left me about 1/2 cup (+/-) of unused marinade for those that wanted a little on the side for drizzling on their plate (like me!). Be sure to blend thourghly as directed or even a little longer. I used a puree setting on my blender. No problem with injector clogging even though I used sea salt. For those that have clogging problems with any injection - avoid the stress & buy a QUALITY injector. Those little plastic ones often included in "kits" are a waste of time. GREAT Recipe.   5. Good job, Dominick! This was a big hit. Thank you, thank you for the directions of running it through the blender for 2-4 minutes. The last time (a good 20 years ago) that I tried to use a marinade injector, the needle hole plugged up repeatedly with the spices, and I tossed out the injector and said "never again." The seasoning blend was PERFECT, and had the perfect amount of "kick."

Tweaks

  1. Garlic powder left some grit. I will be using jarred minced garlic this year. Also I ran out of onion powder midway of making this years batch. So I went out to get more. My local store has a far superior onion powder. It is more finely ground, like talc. The McCormick’s is coarser and gritty. Look for finer ground seasonings.

I had to update this because we got married in January 2009! Yipee! We love to cook and love to try all kinds of new and exciting foods. I (Amanda) am a vegetarian and luckily found someone who has very diverse eating habits. We live in Winter Springs, Florida with our 2 dogs and 2 cats.
