  1. Fry bacon; set aside.
  2. Fry hamburger in 2 Tablespoons bacon grease; add onion; cook down.
  3. Put in bowl minus grease.
  4. Add tomatoes.
  5. In another bowl, mix egg, milk, seasoning salt, brown spicy mustard.
  6. Add 4 slices bread to an 8x8x pan sprayed with Pam.
  7. Place a layer of 1/2 of the vegetable mixture.
  8. Add a layer of 1/2 cup cheese.
  9. Repeat layers.
  10. Top with the other 4 slices bread.
  11. Pour over egg mixture.
  12. Top with remaining cheese.
  13. Let set at least 30 minutes; or refrigerate overnight.
  14. Bake at 350 degrees Fahrenheit for 30 minutes.
  15. Garnish with diced avocado.
