- 2 eggs
- 1⁄4 cup oil
- 2 tablespoons brown sugar
- 1⁄4 cup sour cream, fat-free
- 2 teaspoons lemon juice
- 1 teaspoon salt
- 1⁄2 cup wheat flour
- 1 cup flour
- 1⁄2 cup oatmeal, ground fine
- 2 1⁄2 teaspoons baking powder
- 1 cup milk, I used powdered milk mixed up
- 1⁄2 cup blueberries, frozen
directions
- Mix eggs, oil, brown sugar, sour cream, lemon juice and salt together.
- Add wheat flour, flour, ground oatmeal, and baking powder.
- Add milk.
- Add blueberries.
- Spray pan with Pam.
- Fry until brown on one side; flip and brown on other side.
