Dehydrating Tomatoes

ingredients
- 70 paste tomatoes
- 1 (1 1/2 ounce) bottle mixed herbs (optional)
directions
- Slice your paste tomatoes 1/4 inch thick.
- Slice as many tomatoes as you need to fill the dehydrator.
- You will probably have to do this in more then one batch depending on the size of your dehydrator.
- I have a 5 drawer Excalibur Dehydrator that can hold around 35 tomatoes in one drying.
- Set the dehydrator to 110'F and dry for 15 hours.
- When done let them sit on a cookie sheet for a few hours.
- Use in all sorts of receipes of your choice.
- Put in a glass jar and store in a dark dry place.

Did a small batch of a dozen or so tomatoes for a recipe. Turned out great. I'm thinking I can buy a case of tomatoes (I'm a city girl with a country heart) and get serious! One thing I love about dehydrating is that you can have it run overnight. Look, Ma, I'm multi-tasking in my sleep! Thank you Chef Joey Z for posting!

YUM!!! I LOVE MY DE-HIGH-GREATER!!!! I did on a much smaller scale in my much smaller dehydrator...but same delish results...:) I can eat these like a P-I-PIGGY eating chips :) ...used my garden tomatoes and so so so good...I put some salt and hot pepper on some ...but Mr. free-free likes them plain so I stuck with that mostly to not be completely self absorbed as I often tend to be...:) thanks for sharing the instructions...my goal in life is to get a dehydrator like yours Chef Joey Z...[lol]

I love any cookbook that promotes good health and tasty meals. I enjoy pasta dishes and sweet vegan deserts. I have found that I am very successful in converting conventional recipes to vegan. This has allowed me to enjoy all types of foods that I other wise could not.
Some day we would like to relocate to upstate New York and be closer to my family in Canada and my husbands in New York. My DH retires in 9 years, so nothing will stop us from heading home then :-)
