Delicious Chicken (Or Turkey!) Tetrazzini

"This is so simple, so yummy and a great way of using up leftover chicken or turkey-especially over the holidays. It’s slightly different from most recipes as it uses sour cream and cottage cheese, but it works a treat! A firm favourite in my house-especially with my husband, who is not a pasta fan. A real crowd pleaser!"

  • In a saucepam combine bouillon cubes and hot water.Cook over low heat until cubes dissolve.
  • Boil the spaghetti in the bouillon until cooked. Set aside.
  • In another saucepan melt the butter. Add the flour, salt, pepper and cayenne. Blend thoroughly.
  • Pour in the milk. Add the sour cream, cottage cheese, chicken, mushroom and parsley.
  • Mix thoroughly, and bring to a boil.
  • Add the spaghetti.
  • Pour the mixture into a large baking dish. Top with grated cheese.
  • Bake at 350°F for approx 40 minutes, until top is golden brown.

  1. Made as directed. I have never had Tetrazzini before. I thought it was pretty good, the guests that were over all loved it. So it passes the test! Great recipe, made for PRMR!!!!
     
  2. Very delicious way to use leftover turkey. This is the 3rd tetrazzini recipe we've tried after Thanksgiving holiday and my DH says it was the best one! Instead of chicken bouillon and water, I used 2 cups of chicken stock. I drained the sliced mushrooms, and there was still plenty of moisture left. Overall a family-style dish that I will turn to again and again. Thanks, Noo! Made for PRMR tag game.
     
  3. I was so happy i tried this recipe. I used fresh mushrooms that I fried with 1/2 chopped onion. We loved it; creamy good and a keeper. great way to use leftover chicken
     
  4. Followed directions pretty closely but used more (and a mix of several) cheeses, fresh mushrooms, and added about 1/4 cup chopped green onion. Would be easy to add other veggies like peas, broccoli, or celery. As other reviewers have noted - moist and creamy.

Tweaks

  1. Tagged in Zaar Stars. Everyone enjoyed this, even the picky 6 yo ate it all (he's been complaining about all meat dishes lately!) I used chicken broth instead of hot water and added a little more bcz the noodles (w.w. spaghetti) soaked up too much b4 they were done. Used ricotta for the cottage and no mushrooms. The cayenne gave it a little kick, but not enough to put off the kids. I will add garlic next time to boost the flavor.
     
  2. I chose this Tetrazzini over the other ones on Zaar because it was the first one I found that didn't ask for Cream of Mushroom Soup. I dare to say that I liked this dish better than the thanksgiving dinner I had yesterday! This is a wonderful way to use up the left-over turkey. I used fresh mushrooms instead of canned, (I sauteed them in the butter before adding the flour). I also used Whole wheat pasta and added a little bit of bread crumbs on top of the cheese. It was bubbling and piping hot after cooking for 23 mins, so I took it out early. This is a keeper. I'm recommending it to all my friends.
     
  3. Served with a side salad and garlic bread this made a lovely mid week meal for our family. I used low fat cottage cheese and sour cream, I also subbed fresh mushrooms (sauteed in a pan with a litle butter) for the canned. Reviewed for PAC Spring 2008.
