Delicious Easy Peazy Sponge Cake

"A friend of mine gave me her recipe for this lovely tasting sponge cake but i altered it a bit and have now discovered a new variation.This cake is very light and airy.When the cake has cooled completely you can sandwich it with flavoured fresh whipped cream, or just slice and eat as it is.The family and kids will simply come back for more every time.If you are in the U.K. then use McDougalls Sponge flour.Its the best for Sponge cakes."

  • Pre heat oven to gas mark 4 or as you would to bake a cake.
  • Using an electric hand mixer, whisk the butter till you get a nice soft creamy white colour.Add sugar and mix till nice and fluffy.Add eggs two at a time and beat well after each addition. Finally sift in self raising flour and almond powder and beat well till well incorporated. You will now get a nice thick smooth batter but do not worry. Using a spatula place all the cake batter into a lined 10" cake tin and smooth evenly. Bake in oven for about 45 minutes or till soft and springy.
