“I came up with this whilst dieting. It is very easy to just whip up and has a lovely flavour. I think the butter is essential for the flavour but you could use low fat oil if preferred, or if you are vegan. I use a low fat butter option. Freeze any that you don't use.”

Ingredients Nutrition

  • 1 tablespoon butter (low fat)
  • 400 g frozen peas
  • 1 white onion (large)
  • 475 ml boiling water
  • salt and pepper (to taste)
  • 1 vegetable stock cube
  • 2 garlic cloves (large)

Directions

  1. Melt butter in saucepan over medium heat.
  2. Chop onion and crush garlic.
  3. Slowly fry onion and garlic to release flavour until soft.
  4. Add water and peas.
  5. Simmer for 12-15mins.
  6. Crumble over stock cube.
  7. Remove from heat and blend in blender.
