Delicious No Mayo Chicken Salad

- 2 -3 cups cooked chicken (diced or cubed or shredded)
- 1 (1 ounce) packet ranch dressing mix (I used Hidden Valley Harvest Dill)
- 1 (16 ounce) container sour cream
- 1 (4 ounce) can water chestnuts (drained and chopped)
- 1⁄4 cup green onion top (chopped)
- 1⁄2 cup shredded mozzarella cheese
- 1 teaspoon black pepper
- 1⁄2 - 1 teaspoon celery salt
- seasoning salt (To taste)
directions
- In a bowl combine chicken, seasoning salt, black pepper and celery seed, stir.
- In a seperate bowl combine sour cream and ranch packet, mix well.
- Combine seasoned chicken,water chestnuts, green onion,mozarella cheese and ranch mixture, mix well.
- Adjust seasoning to taste, refrigerate for at least 30 minutes to allow flavors to meld.
- Serve on rolls, crackers, or toast.

Yum! I enjoyed the crunchiness added by water chesnuts and the addition of cheese was another highlight. I liked the creamy ranch flavor & thought it mixed well with the other ingredients. I added celery and used just enough low fat sour cream to hold things together. Thank you for sharing the recipe! Made for Spring 2011 Pick a Chef.
