  1. Preheat the oven to 350 and spray a 12-cup muffin pan with cooking spray.
  2. Sift the flour, pumpkin pie spice, baking powder and salt together in a large bowl.
  3. In a seperate bowl, mix together the pumpkin puree, sugar, eggs, oil and vanilla.
  4. Whisk the wet mixture into the flour mixture.
  5. Fill each muffin cup 2/3rds full and bake the muffins 25 minutes, or until springy when touched.
