Deluxe Chocolate Marshmallow Bars

"This is one recipe I always take to potlucks, after seeing it in a magazine some years ago. They are dead easy to make and disappear so quickly!"

  • Cream butter and sugar together in a bowl.
  • Add eggs and vanilla, beating until fluffy.
  • Combine dry ingredients and add to creamed mixture, stiring in nuts, if desired.
  • Spread in a greased jelly roll pan.
  • Bake at 350 F for 15-18 minutes.
  • Remove pan from oven and sprinkle marshmallows evenly over the base.
  • Return to the oven for 2-3 minutes.
  • Then take a knife, dipped in warm water, and spread the melted marshmallows evenly.
  • Cool.
  • For topping, mix chocolate chips, butter and peanut butter in a small saucepan.
  • Cook over low heat, stirring constantly, until melted and mixed.
  • Remove from heat, stir in cereal, and spread over bars.
  • Chill in fridge until cool and ready to cut.

  1. I have this same recipe, and oh my goodness are they yummy! It's all my favorite junkfood in one dish. It's a brownie, topped w/ melted marshmellow, and then topped w/ what i call a peanut-butter crunch. It's to die for and extremely easy to make. If I'm lazy I'll just buy a store bought brownie mix, make to directions on box, and then follow the rest of this recipe. Yummy, Yummy!
     
  2. These turned out very well and they were quick and easy to make. The topping was not a hard topping since there was a cup of peanut butter in it. So I kept them in the refrigerator until time to serve.

  4. These bars were ooey- gooey and delicious! Everyone at my party loved them. Maybe a little less marshmallows next time but definately a hit!

This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes. Right now we are travelling around the world on our bicycles, so I only pop onto Zaar occasionally, when internet connections and time allow me to. If I don't reply to a message about one of my recipes, now you know why! Our trip may take several years so if it's urgent, it's probably better for you to post in the forums ;) Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce. When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice. We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
