  • In a nonstick skillet, heat oil over med-high heat.
  • Add in green peppers and onion; saute until tender, about 5 minutes.
  • Add in ham and saute until heated through, 3-4 minutes.
  • Transfer to a plate and keep warm.
  • In the same pan, melt 2 t butter over medium heat.
  • Add eggs, salt, and pepper; scramble until eggs are desired consistency; remove pan from heat and stir in ham mixture.
  • Brush one side of each bread slice with melted butter.
  • Place on a work surface, buttered side down.
  • Divide eggs evenly between two bread slices and top with cheese.
  • Cover with top halves and press gently to pack.
  • Place sandwiches in preheated panini grill; close the top plate and cook until golden brown, 3-4 minutes.
  • Serve immediately.
