- 2 teaspoons olive oil
- 1⁄2 cup chopped green bell pepper
- 1⁄4 cup chopped onion
- 1⁄2 cup diced baked ham
- 2 teaspoons butter
- 2 eggs, beaten
- salt
- fresh ground black pepper
- 4 slices sourdough bread (1/2 -inch thick slices)
- 1 tablespoon butter, melted
- 1⁄2 cup shredded cheddar cheese
directions
- In a nonstick skillet, heat oil over med-high heat.
- Add in green peppers and onion; saute until tender, about 5 minutes.
- Add in ham and saute until heated through, 3-4 minutes.
- Transfer to a plate and keep warm.
- In the same pan, melt 2 t butter over medium heat.
- Add eggs, salt, and pepper; scramble until eggs are desired consistency; remove pan from heat and stir in ham mixture.
- Brush one side of each bread slice with melted butter.
- Place on a work surface, buttered side down.
- Divide eggs evenly between two bread slices and top with cheese.
- Cover with top halves and press gently to pack.
- Place sandwiches in preheated panini grill; close the top plate and cook until golden brown, 3-4 minutes.
- Serve immediately.
