Desperate for Sushi

"I love sushi but I'm not as near to places that serve sushi as I use to be, so I have to use what I have. I do have the basics just not the raw fish that I miss so much. My favorites were spicy ahi and phylli maki. So I tried to get as close to it as I can. As for amounts, I use leftover rice so I usually make one or two rolls and just cut off 1/4 of a cucumber and cut that into strips and that's still more than enough. Now these measurements or just guess. I really just eyeball and adjust to my taste. But it's better to do too little than too much. Now I have been to places with less ingredients than this available. Too me the key ingredients are the seaweed sheets, rice, soy sauce, mayo, and for me wasabi since I like it (but that may be hard to find some places) Everything else you can try to substitute with something you like more or you can just eliminate if you don't like it. One time instead of picked ginger I used spicy kimchi. I liked that one to. Just mix and match according to your taste. Eventually you will find the right mix for you. Especially if you are like me and desperate for sushi"

  • I just use any leftover white rice I have and warm it in the microwave with a little water.
  • In a small bowl mix about 2-3 Table of mayo and 1-Tab of soy sauce and splash of rice vinegar about 1/2 Tab I think. Mix that with your rice till all rice coated. It may make your rice look a little brown because of the soy sauce but it should not look like rice pudding. That's too much mayo, unless you want it that way. Here you can taste the rice a see if you like it or not and if you want more mayo or soy sauce or vinegar.
  • For your smoked salmon cut it into strips or smaller if like. In another small bowl mix a splash of soy sauce and 1/2 Tab mayo and tiny bit of wasabi paste. Pre warning to people new to sushi. Wasabi paste will clear your nose so DON'T use too much. Taste and adjust. Then add smoked salmon and mix just till lightly coated. Like the rice you are just coating it.
  • Then spread rice on seaweed sheet.
  • Lightly sprinkle rice with sesame seeds and put your strips of cucumber, salmon, and ginger on one end. I also like to put a line of wasbi paste in front of that- then roll.
  • And there you have it. It maybe a little messy if you put too much filling; but if so just eat it and remember to add less next time.
