Desperate Housewives Better Than Packaged Breading

"I just came across this in a cookbook, so have not tried it yet. I did not see anything like it on the site so decided to share. You can use this with pork chops, chicken, fish or veggies (broccoli & cauliflower). I am posting the recipe as it is in the book, but think I will cut the salt in half for sure. You can add some parmesan cheese to this as well. Store it in an airtight container in a cool, dark place for up to 2 months."

  • Mix together until well blended.
  • Store tightly covered in a cool dark place.
  • To coat meats for baking, mix 1/2 cup of breading with 1 tsp vegetable oil.
  • Spread crumbs on plate and press onto both sides of meat or fish.
  • Bake until coating is golden, and meat or fish is cooked through.
  • To coat broccoli and cauliflower, par boil veggies, drain & cool completely.
  • Mix 1/2 cup breading with 2 Tbsp grated parmesan & 2 Tbsp melted butter.
  • Toss veggies in crumbs, spread on parchment lined baking sheet.
  • Bake at 400° about 12 minutes, serve hot, warm or at room temperature.

Chef #8832636. My memebership on this site goes back to the days of recipezaar, so I have seen a lot of changes on the site over the years. I still miss the forums, they had a wealth of information in them, and it was great to be able to connect with other chefs through them. I don't think zmail exists anymore either, so I don't think we have any way of contacting other chefs now. I haven't been on the site much in the last few years, mainly because of the changes. I do still pop in to look for specific recipes. I enjoy cooking, and am passionate about baking.
