Diet Cake

"Our biggest problem...is nibbling at the cake till its gone. This way, you only bake a smaller cake! You get the great taste of cake, a reasonable sized piece.....and a cake mix makes 3-4 cakes! A later note: I have added up to a cup of blueberries to this. Just be sure to let it cool a bit, it gets eally hot inside the berries!"

  • 473.18 ml cake mix, any flavor
  • 2 egg
  • 19.71 ml vegetable oil
  • 29.58-118.32 ml water
  • 2 to taste Pam cooking spray
  • 226.79 g can frosting

directions

  • Measure out one cup of cake mix.
  • (Put the remaining mix in a zip loc bag in the fridge.) Mix in egg and oil.
  • Put water in 1/4 cup measure.
  • Pour into mix, stirring, a tablespoon or so at at time (I'm at high altitude and use 1/4 cup water, yours will probably need less).
  • Stir until lumps disappear.
  • Spray an 8-10" pie pan with Pam.
  • Put the mix in the pan.
  • Bake at 350 for 12-15 minutes or until cake pulls away from side of pan.
  • When cool, frost with frosting.

  2. What a fun little cake. I was skeptical but went ahead since all the other reviews said it really works. It does make a nice size cake. I used 3 Tbsp water and wasn't sure what was the right consistency. It baked 14 minutes and cools very quickly.
     
  3. WOW!! This recipe is wonderful!! When I first saw that it took only 1 cup of cake mix, I didn't think it would be enough, buy it was I did need to add another tablespoon of water to make it the right consistancy. Other than that, everything else was just the right amount. I like cake but a whole cake is just too much for me. This size is perfect!! Thanks for a great recipe!!
     
  4. What an excellent idea for our small family! I made this with yellow cake and put a handful of mini semi-sweet chocolate chips in. It was delicious just like that! Twelve minutes in the oven was perfect using my Pyrex pie dish.
     
  5. WOW! This was such a GREAT find! I absolutely love cake, but I am the only one - my husband and daughter don't really care for it. So this works out great for me!! And it tasted delicious! Just like it should taste! Thank you thank you for coming up with such a great idea!!!! UPDATE - I still love this recipe! Use it all the time to make cake without tons of leftovers. You can also make two of different flavors and layer them and still not have too much left over.

Still in West Virginia but we've moved a few miles away, down to the county capitol. It's a compromise: bigger than our last town but smalelr than the "big city" of Cumberland MD, right up the road. Jobs are not that plentiful here so I am fortunate to be able to work at home (I'm a writer).
