"Alternative "diet soup" that does not include cabbage. Recipe is from Good Housekeeping. To retain freshness and nutrients keep a 2 day supply of Basic Soup in the refrigerator. Pack remaining soup in 3 cup portions in airtight containers, leaving some room for expansion. Freeze."

  • Coat pan with nonstick cooking spray.
  • Over medium high heat add carrots, celery, onions, and garlic.
  • Cook, stirring occasionally, 5 minutes.
  • Stir in tomatoes with their liquid, breaking up tomatoes with side of spoon.
  • Add cauliflower, remaining ingredients and 12 cups of water.
  • Heat to boiling over high heat, stirring occasionally.
  • Reduce heat to low, cover and simmer, stirring occasionally, 15 minutes or until vegetables become tender.
  • Add more salt and pepper if desired.

  1. Great! I love all these veggies. I even added a few frozen peas and a cup each of turnip and rutabaga. I didn't have leeks, so I used onion and that worked out good. I also added 2 cans of beef broth and used beef boullion, just because my husband will eat it better if it's got a beefy taste. It has a lot of veggie flavor, we really liked it! Thanks Jo Ann, for another keeper!
     
  2. This soup is excellent!! The only changes I made were: I substituted some of the water for low fat vegetable broth and one can of Tomato soup. It was easy to make. I take one cup of this to work and have it for my lunch. Really delicious.
     
  3. Very good.I didn't have all the fresh ingredients but I put some frozen vegetables and it turned out excellent.
     
  4. Easy and inexpensive, makes a lot so halve the recipe or be prepared to freeze. Very forgiving. I made as written then added some basil. Good basic veggie soup recipe. I plan on eating as is this time, then with a handful of bulgur cooked into it once, maybe white beans once, maybe diced chicken or beef, you could have one soup with many variations easily.
     
  5. The recipe is great as is...sorry but the one thing I don't like is when peoples reviews are not of the recipe but a recipe of their own, if you want your recipe, hello..., post it, don't criticize the recipe unless you actually followed the given recipe. Thanks

  1. I made this soup today, and the only thing I did different was to add the cabbage instead of spinach..I just don't personally like it, but the cabbage, I'm sure won't change the taste much, if you want to try something different..This is an excellent update, from the original "cabbage soup diet" I tried many years ago..It has much more flavor, and my oldest son even enjoys it occasionally!!!
     
  2. I'm currently entrolled in the Jenny Craig Weight Loss Program -- and they have a very similar soup that is "free". I have made it severalt times and it's really good. This soup even has a bit more to it -- so I'm sure it is fantastic. The recipe from Jenny Craig calls for "low sodium" ingredients (i.e. the tomatoes and broth/bouillon). V-8 Juice is also a "free" food on my diet -- as long as it's low sodium, so I always use some of the V-8 juice in place of the water called for in the recipe. It really adds to the flavor. I prefer beef broth/bouillon in place of chicken. I also add fresh asparagus and brussell sprouts! Of course if you don't care for those two veggies, leave them out. If it's used as a true diet soup -- those suggesting to use peas, corn, potatoes, etc. -- well, those are not considered "free" foods. But if it's strictly for flavor and one is not concerned about the diet aspects of the recipe -- GO FOR IT! ADDED NOTE: This is really tasty -- and very satisying.
     
  3. Wonderful! After cooking it on low for about 1.5 hours, all the flavors have come together and makes for a great 'diet' soup! I used a lower salt chicken broth (4 cans) instead of the water and cubes. I used all the veggies your recipe calls for but my girls said that they prefer cabbage in soup instead of the spinach. Just a personal taste thing. I've got plenty for dinner and leftovers. ~ Update: I made this again yesterday to have on hand for the 'hungries' and used cabbage instead. I also threw in some leftover corn from dinner. Turned out great again.
     
  4. We love this soup. I have made it off & on for years. The changes that I made this time was I used 2 cups shredded Cabbage instead of the cauliflower & used tomato juice & a few cut up plum tomatoes also a small can of V8 for the can of tomatoes. My DH is on a soup diet for 2 weeks Doctors orders. So this really works good for him & he likes it. Thank you Karen for posting the recipe, espically since I couldn't find my old weight watchers recipe much like this one.
     
  5. I just completed this soup. I really like the flavor. I made a few changes to the recipe. I omitted the green beans and bouilion (didn't have any)and added 2 cups of my infused chicken broth made with thyme, parmesan rinds and parsley in place of 2 of the cups of water. I probably used a little more salt than the recipe called for (my personal taste). Very tasty and satisfying.

Love to read. I collect books and have quite a collection but am always adding more. I have also discovered audio books and find that I am able to get through more books by listening to them. Have recently started knitting and I really enjoy it even if it is quite a challenge at times. Always searching for a great recipe in any food category. As might be expected I never find "The One" but find many delicious ones along the way. One of our favorite restaurants is Jensen's Supper Club located in Eagan, MN.
