  • In a soup pot add olive oil, onion, chicken, red pepper and cover over a medium low heat, stir occasionally.
  • Dice rutabaga in very small cubes 1/2 inchx1/2 inch after removing the waxy outside.
  • Peel and dice carrot.
  • Once chicken starts to cook through, add in remaining indgredients.
  • Cover, let simmer for 1 hour.
  • Pull out chicken and shred or cube as desired then add back into the pot.
  • Serve.
