Different Carrot Salad

"This is something I threw together with things I found in the fridge. It's a nice lunch, or "lite" dinner salad. Serve with crusty wheat rolls and a glass of chabli."

  • In med.
  • bowl, shred carrots, add cucumber, tomato, feta and olives.
  • Toss mixing well.
  • Add Caesar Dressing to taste, toss and serve with whole wheat rolls.

  1. The first time I made this, I tripled it for a large party. It was easy and the results were delicious. The feta cheese was a great addition. I used about 3/4 of a bottle of the Caesar Dressing for the tripled amount. That was the part that took guess work...especially for the first time making it.

I have a growing family - 3 horses, 2 dogs (1 being a Great Dane)!, 2 children, 2 cats and a boyfriend. I work quite a bit either at work or on the farm taking care of the "children" - my boyfriend is a stay at home "step-dad" to all and is a former chef so we like to find new ways to cook old foods. This year we will be growing an organic garden and I am ever so excited about it. Organics are a large part of our lives, and they can really put a strain on your pocket book!
