  • Combine first 6 ingredients.
  • Butter croissants – this is important as the butter makes a ‘lining’ to prevent the croissant from getting too soggy, and it tastes good too.
  • Fill croissants with lettuce, tomato slices and chicken salad.

  1. My husband LOVED the "zip" that the dijon mustard gave to the salad. He said it is probably one of the best recipes he's tasted. That, and it is SUPER easy to make!
     
  2. This is a great sandwich! The dijon mustard and dill give it a nice zip. Unfortunately I wasn't able to find any croissants around here, but we had them on sub rolls and they were still delicious. I'm hoping to find the croissants so I can try them again that way! Thanks for a great lunchtime treat!
     
  3. This was a little different, and good. I doubled the recipe and used dried dill. I did not, however, use the croissants, lettuce and tomato. We just used it to make plainer sandwiches with bread we had in the house. I can see myself making this again.
     
  4. Excellent tangy sandwich. I used a bbq chicken to save time and mixed everything together the night before. The flavours melded beautifully and were perfect on the croissants. Thanks for posting your delicious recipe!
     
  5. (July 19, 07)I just finished mixing this up, it was ready in hardly no time at all. I did add one stalk of celery only because I wanted a little more crunch. I'd be making this one again. Thanks for posting. [b]Update:[/b] You should refrigerate this over night as the next day the flavors really come together. YUM!!

Tweaks

  1. This was excellent, I made a few changes like using tart apples instead of the onions and Honey Dijon instead of the Dijon. I also split the recipe and used half for sandwiches and turned the other half into a pasta dish. I am going to create the pasta dish as a new recipe and call it Evelyn's Dijon Dill Chicken Salad. Thanks Evelyn for the great recipe and hope you don't mind me using part of this for a new recipe.
     
  2. Very nice and unique. The dill-dijon flavor was interesting. Instead of croissants, I made sandwiches using 100% whole wheat bread. A good take-to -work lunch. Thanks.

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
