Directions

  1. Preheat oven to 350° F.
  2. Slice your polenta + mozzarella into thin rounds. Set aside.
  3. Halve chicken breasts.
  4. Spray pan with coconut oil.
  5. Saute chicken on medium high heat. Once tender, add mustard + maple syrup.
  6. Bring down the heat as the sauce bubbles.
  7. Spray a cookie sheet with coconut oil.
  8. Layer sliders from bottom to top with polenta, mozzarella, spinach, chicken.
  9. Bake in the oven for 15 minutes.
