Dilled Oat Bread

ingredients
- 1⁄4 cup brown sugar
- 1⁄2 cup warm water
- 2 tablespoons dried yeast
- 1 small onion, chopped
- 2 cups cottage cheese
- 3 tablespoons butter
- 2 teaspoons salt
- 2 eggs
- 2 cups buckwheat flour
- 1 1⁄2 cups wholemeal flour
- 1 cup rolled oats
- 2 tablespoons dill seeds
directions
- Dissolve 1 tsp sugar in water and sprinkle yeast over, leave in a warm place until frothy.
- Blend together cheese, onion, butter, salt, eggs and the remaining sugar. Set aside.
- Mix flour with oats and pour in yeast liquid, stir in cheese mixture & dill seeds. Knead until smooth.
- Place dough in a warm, greased bowl and cover with a damp tea-towel. Leave dough in a warm place until doubled in size.
- Knock back dough & in a 1.5L casserole, cover & let rise to double again.
- Heat the oven to 180.C and bake loaf for 35 mins or until cooked.

Really enjoyed this bread, and it would be five stars except I found the directions lacking a bit. I probably would have a better result in terms of texture if I had processed the cottage cheese rather than stirring it together, but the flavor is grand! It stands up well to a couple of changes I made due to what I had available and what I didn't. It's a keeper.

Boy am i glad that I made this bread, it is supurb. All the flavours are fantastic together, and the fact that I forgot the brown suger didn't matter at in. The cottage cheese seems to give it a slightly sour/tart flavour that I really enjoyed. Made, reviewed and photographed for the Aus/NZ Recipeswap # 27, April 2009

Melbourne I live on a 5 acre property in the Dandenong Ranges Victoria, Australia, having moved from the burbs when I became pregnant with my now 15 year old daughter Alyssa.
Once my daughter was born I became a stay at home mum as I couldn't bear the thought of putting her in daycare. She is the light of my life, I never imagined myself as a mum when younger but now wouldn't have it any other way. Alyssa was made a big sister on the 19th April 2010 when our cheeky little boy Blake was born. I love cooking and experimenting with new recipes so quickly become addicted to Zaar as it was previously known & still use it regularly. In addition to being my kids taxi :lol: I also spend my time, reading, gardening and of course shopping. I'm lucky enough that we have the space & so love growing our own fruits, vegies & herbs, this also means we have plenty of room for animals & at the moment have 2 dogs, Max, a Jackshund who's 6, Fletcher, a Kelpie who's 4, 6 cats Snowpea, Fergus, Ginger, Tango, Annie & Cookie, 4 chooks & 2 Ducks.
As well as our pets, we also have a lot of native animals around our area, we have kangaroos, wombats, echidna's, possums as well as rosella's, galah's & Cockatoo's hence the name of where I live..
