  • Gently pound chicken to 1/4 inch thickness.
  • Heat olive oil, cook and brown the chicken on both sides for 10 minutes.
  • Place in baking dish.
  • Top each piece with a quarter of the brie and 2 T of the preserves.
  • Sprinkle with the almonds.
  • Bake at 400* for about 8 minutes, until cheese melts and chicken is done.

  2. Awesome! Had some Brie I needed to use so found this recipe. It was so good, I bought more Brie and look forward to making it again soon. Super fast and easy but really impressive. Everyone in the family enjoyed it. Was a little short on apricot preserves but had some dipping sauce from Recipe #93688 in the fridge (1 cup apricot preserves plus 2 T Dijon mustard) which I used on one chicken breast. That was quite yummy, too. Thanks for sharing the recipe!

  4. Crunchy, salty, sweet, and savory beyond belief! Garlic Rondele was substituted for brie and made an excellent compliment to all of the flavors. Calorie counts were lowered with the use of Splenda sweetened Apricot preserves. Beautiful presentation and truly ideal for a dinner-party. Anyone with half-a-brain would be impressed. I was!

I cut up the brie into smaller pieces so it would melt easier, and my oven time was a little bit longer (10 minutes). Thanks for a great recipe.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
