Dirty Chicken and Rice

"I usually make recipes from scratch, but had to try this, it called for hamburger but I used boneless skinless chicken. My husband and I both loved it!"

  • Heat 2 Tbsp olive oil in 12-inch nonstick skillet over medium-high heat, add chicken and brown, stirring occasionally.
  • Stir in onion, red pepper and celery. Cook, stirring occasionally, 3 minutes or until veggies are crisp-tender. Stir in Dirty Rice and cook, stirring frequently, until rice is lightly toasted, about 2 minutes.
  • Add water and bring to a boil over high heat. Reduce heat to low and simmer covered until rice is tender, about 7 minutes.

I am a mom to three young adults, growing up, they each had their own ideas in what was good and what wasn't. But, at least once a month, I tried a new recipe on them, all of them loved it. Only once, have I ever had a recipe bomb on me. So, my track record is pretty good. Now, I am getting a little older, and in a relationship with a great guy. Cooking for him isn't too hard, but, tends to be interesting. I am 5'0, and although I can eat, and love to, I don't eat a whole lot. He on the other hand, is 7'0, and cooking for him, lol, you get the idea.
