Dirty Rice, Saturday Morning Special

  • Place 3 Cups of water and 1 t salt in a 5 quart pot. Bring water to a boil and add 1 chicken bullion cube and one T of butter.
  • Add 1 1/2 C long grain rice. Bring water back to a boil, stirring constantly. Turn heat down to a simmer and cover with lid. Cook 15 minutes. Let stand 10 minutes until all of the water has been absorbed.
  • Chop onion, red pepper and celery. Set aside.
  • In another skillet, brown sausage and add chopped vegetables to sausage. Brown over medium heat for 5-10 minutes.
  • Drain sausage/vegetable mixture WELL,.
  • Combine the rice with the sausage mixture and stir, heating the mixture thoroughly.
  • Add salt and pepper to taste.
  • * If you like the dirty rice spicier, you can add a few drops of your favorite hot sauce to taste.
  • ** In summer, you can add one or more medium tomatoes, chopped.
