  • Preheat oven to 350* and spray a 9x13 - deep dish glass baking dish - with a non stick spray.
  • Using a very large mixing bowl, add Chicken, Sauce, minced Garlic, Pesto, diced Tomatoes, Onions, Mushrooms, shredded Mozzarella, Cheddar and Gouda.
  • Add the Penne Rigate or Rotini noodles and mix well.
  • Pour the mixture into the glass baking dish.
  • Next mix the Romano or Parmesian cheese with the Italian bread crumbs and sprinkle over the top.
  • Cover with Aluminum foil.
  • Bake for 25 minutes or until the casserole is hot and bubbly.
  • Remove the foil and add the 12 thick sliced tomatoes to the top of the Casserole ( make it pretty so each serving has a tomato on top )., Next drizzle them with the olive oil.,.
  • Bake the casserole for 15 minutes more or until the tomatoes are roasted and pretty ( keeping a watch on them so the tomatoes are not over cooked ).
  • Serve with a Simple salad and maybe some French Bread or Garlic Texas toast.
  • Enjoy!

  1. Thought I would write a review up for this since nobody else has yet! It was delicious, but the recipe itself has a few issues. First off, the ingredients are not in the right order for how they are used, a pet peeve of mine. Also, this was way too much food for the size pan it suggested, which I suspected on first reading it. And when they say "large bowl", they aren't kidding! I didn't have one big enough! I think I might experiment with combining various things and doing it in layers. But as far as flavor goes - yummy!!!

After I was born we moved back to Tennessee, Where my parents were born. I have remained here because of the beautiful Mountains! We bought a Home overlooking the mountains of Cumberland Gap Tn. I love to cook!!! Before I became disabled, I worked as a Caterer and as a Supervizing Manager in a Deli/Market for 15 years. It was my life. I miss it very much. I have learned alot about cooking and baking from my Grandmother's and my Aunt's.We do a lot of canning, things like Jellies and Apple butter, Chow Chow,Mixed pickles, Strawberry jam, Gr. Beans and Pickled Beats. And my favorite is the homemade Strawberry Jam. We have even had several Mollasses Stir Offs in the Fall at my Church & we make Apple Butter and Cider. I was raised in the Southeast and we love to COOK. It must be something in the water? LOL & If it involves cooking count me in!!! I Love the Food Network and all the cooking shows. I Have found alot of great recipes and made alot of friends from this Web site.
