Downeast Lobster Roll

"That Maine-iac has me dreaming of my favorite summertime treat! Use any type of roll you like for this recipe. In the northeast the hotdog rolls are flat on the sides and split on the top. Hotdog rolls and fresh Kaiser rolls are what I usually grill for this sandwich. Enjoy!!"

  • Mix mayo and lobster, S& P to taste.
  • Set aside.
  • Split and butter roll.
  • Grill roll in a fry pan until until crisp and golden brown.
  • Remove from heat.
  • Add a bed of lettuce to roll and top with lobster salad.
  • Eat immediately while roll is still warm.
  • Serve with thick slices of tomato and a half dozen olives on the side.

  1. Very good, we added a little mustard wasabi dipping sauce to the mayo / lobster mix to give it a little kick! Served on hot grilled brat buns. Really good!
     
  2. Marvelous! I added a bit of minced onion and celery and served it with a croissant. I haven't had a lobster roll since I was a kid. We had it in our lunch sandwiches sometimes and we would groan and try to trade for something better, like bologna!! But now I'm all grown up and I love lobster. Very good, and the memories too. Thank you.
     
  3. This was very good. I fixed two (one for DH and I) and added minced celery and a little fresh minced chives. Grilled the rolls and we gobbled them up for lunch. Thank you for posting. Made for Zaar Cookbook Tag game 2012.
     
  4. Delicious. Hey I lived in Aroostook County for 6 years when Loring AFB was still open. Anyway, I added celery to this too and a bit more mayo, and a tbsp of finely chopped up dill pickle. I took some pepperidge farm hot dog rolls that were split across the top and cut the sides off so they would look like the ones in Maine. Then I buttered and grilled the roll and both sides and filled it with the salad. Awesome.

Zaar...Wow, what a place! I'm one of the old timers of Zaar. I can't count the number of wonderful dishes I cooked in the past few years since joining. Along the way I have had the pleasure of meeting several Zaar chefs. Talk about your fruits and nuts! lol. I have enjoyed meeting them all. Family: What's to say...I have had the same sweet husband forever (Good thing....I'd hate to have to break a new one in...=) and live close to a couple of grown children. (Maybe you've met Smoke Alarm Jr. ..her brown rolls are sooo good!) Therefore, my family gets together often to enjoy each other's company and cooking. My greatest joy is six "little to tallerthanme" kids running around calling me Grammy. They wear me out! lol For the past thirty years I have been a Special Education teacher for grades 9-12 and love it. Took some time off last year to recovery from surgery, chemotherapy and radiation for breast cancer. (Loved the radiation....I keep imagining that we are absolutely napalming the nasty cancer cells tohellandback to keep the little suckers from returning. =) My prognosis is good and now "I'm back in the saddle again". lol. Being a north country "gurl", I am happiest outside...walking, fishing, sitting in front of an outdoor fire or being on water (although in February it's a bit stiff....=0) When indoors I like to read, garden, knit, quilt and paint. During cold Maine weather I like to warm my feet on a very large ( 100 pounds of long legs and huge feet), sweet and furry golden retriever named Kerry (aka KTBRD: Kerry the big red dawg..lol) . In the summer, the dawg and I round up the grandkids, hit the local dairy bar for a Mounds Sundae that is to die for!!!=0) . Then spend a lot of long and lazy summer days at camp . All in all...Boy, Life is good! =)
