Ingredients Nutrition

  • 1 (1 1/2-2 lb) pork tenderloin, cut into 2-inch cubes
  • 1 medium onion, peeled and sliced
  • 1 fresh jalapeno pepper, seeded and sliced
  • 4 slices orange peel (optional)
  • 1 (12 ounce) can Dr. Pepper cola, Mr. Pibb or 1 (12 ounce) can Coca-Cola
  • 16 fajita-size flour tortillas
  • pico de gallo (or fresh made salsa)

Directions

  1. Combine pork, onion, jalapeno, orange peel and soda in a crockpot.
  2. Cover and cook on LOW for 8 hours.
  3. Uncover and shred the meat using 2 forks.
  4. Serve on flour tortillas and top with pico de gallo, if desired.
