Dr. Pepper Dixie Jelly

  • 3 cups Dr. Pepper cola
  • dry pectin (a small box)
  • 14 cup lemon juice
  • 3 drops red food coloring (optional)
  • 3 12 cups sugar
  • paraffin wax

directions

  • Mix Dr. Pepper, powdered pectin and lemon juice in a large saucepan.
  • Add coloring, if desired.
  • Measure sugar into a bowl to add later.
  • Place Dr. Pepper mixture over high heat and stir until mixture comes to a hard boil.
  • At once stir in sugar.
  • Bring to a full rolling boil and boil hard one minute, stirring constantly. Remove from heat, skim off foam with metal spoon and pour quickly into glasses.
  • Cover at once with 1/8-inch hot paraffin.
  • Allow several days to set.

  1. There is a bit of an oxymoron in the ingredient list. Dr Pepper is not a cola. All colas have sassafras root extract as one of the ingredients. Dr Pepper does not contain any sassafras extract whatsoever. I'm very allergic to sassafras in all forms and I can drink Dr Pepper with no problems. Even 1/2 a fluid ounce of cola can put me in the emergency room. But as to the recipe. The jelly tasted remarkably like the hot Dr Pepper we had in the winter, back when the Dublin Bottling Co still made Dublin Dr Pepper. Every cafe for 30 mile radius of Dublin served it. To make you'd place a slice or 2 of lemon in a cup and then pour Dr Pepper that was heated to the verge of boiling over the lemon. Delicious on a cold day. This jelly brings back memories of those days.

  1. Oops! Forgot to mention that I didn't do the paraffin but instead canned it using a waterbath. Set up just fine.
