Crust
- 2 cups flour
- 3⁄4 cup brown sugar
- 1⁄2 cup pecans
- 1⁄4 teaspoon salt
- 10 tablespoons unsalted butter (cut into 1/2 inch pieces and chilled)

Topping
- 1 1⁄2 cups sweetened flaked coconut
- 1 cup cream of coconut
- 2 large eggs
- 3⁄4 cup brown sugar, packed
- 2 tablespoons flour
- 1 1⁄2 teaspoons baking powder
- 1 teaspoon vanilla
- 1⁄2 teaspoon salt
- 1 cup pecans, toasted and roughly chopped
directions
- Preheat oven to 350 degrees and place oven rack in the middle.
- Line pan with foil and spray with non-stick spray.
- Crust: Mix everything EXCEPT for the butter in a food processor till coarsely ground.
- Add butter till consistency is coarse meal.
- Press firmly into pan and bake for 20 min or until golden brown.
- Cool for 20 minute.
- Topping: Combine coconuts in a bowl.
- In another bowl, whisk everything EXCEPT for pecans till smooth.
- Add pecans and pour filling over crust.
- Dollup heaping tablespoons of coconut mixture onto filling.
- Bake till golden brown, about 35-40 minutes.
- Cool for 2 hours.
