  • Preheat oven to 350F; grease and flour two 9-inch cake pans and set aside.
  • In a large mixing bowl, combine the cake mix, gelatin, flour, water and eggs, and beat with mixer for 2 minutes.
  • Add 5oz. of the strawberries with syrup to batter and beat 1 minute more; then add oil and beat for an additional minute.
  • Pour batter into prepared pans and bake in preheated oven for 25 to 35 minutes.
  • Remove from oven, let cool in pan for 5 minutes, then remove from pans and place on a rack to thoroughly cool.
  • When cake has cooled, frost with Strawberry Frosting, making a 2-layer layer-cake, putting frosting between both layers, on sides and on top.
  • Garnish top with fresh strawberries, if desired.
  • To make frosting, beat the butter in a large mixing bowl, with electric mixer, until smooth.
  • Beat in icing sugar, alternating with 5oz. of strawberries and syrup, until smooth.
  • Add vanilla extract and, if necessary, thin with a little milk or cream to spreading consistency.

  1. I have made this many times since I first printed it off in 2009 :) I have made it as a layer cake as stated, as a 9x13, doubled recipe as a 1/2 sheet cake (11x18) and as cupcakes. All of them have been a huge hit! Thanks for sharing this recipe. I do agree that the recipe is confusing....I put 5 oz of thawed frozen strawberries in the batter and 5 thawed frozen strawberries in the frosting. What makes the recipe sound confusing is "the other half" of the box....the container of strawberries is 10oz. I also used 3 oz box of strawberry jello. Hope this helps anyone else wanting to try this fab recipe!!!! I followed the recipe exactly!
     
  2. Wow, this is soooo yummy!! I thought it "might" be ok, but it completely blew us all away how good it is. I'm using it as the bottom layer of a three tier wedding cake (strawberry, chocolate and vanilla), can't wait to eat some more!! I made Wilton's buttercream frosting recipe, used all butter and pureed the strawberries as the liquid, sub'ed white creme de'cacao for the vanilla and it was amazing!! So pretty with the flecks of strawberry in the icing, no food coloring needed for a pretty in pink cake!! Thanks so much!! Michelle
     
  3. Excellent upgrade to your ordinary strawberry cake! Also excellent if you add strawberry gelatin to the icing you make. I made it with buttercream icing and it was outstanding!
     
  4. Very good cake Lennie, took a bit of time to prepare, but well worth it, this cake is strawberrylicious! I didn't have any white cake mix so I used yellow, but i think it would have been better with white as the pink colour would have shown up better. I'll make this again soon, we all enjoyed it.   5. I have make this cake several times and everyone loved it. I don't see anything confusing about the recipe as others have stated. Definitely a keeper.
