Dressed-Up English Peas

"Good casserole to serve to guests. My children who thought they couldn't "stand" green peas, loved this once they got the courage to try it. Recipe was given to me by a favorite friend who worked with me in nursing."

  • 1 (19 ounce) can le seuer peas, drained
  • 1 (10 3/4 ounce) can cream of mushroom soup, undiluted
  • 1 cup sharp cheddar cheese, grated
  • 12 package hidden valley ranch dressing mix
  • 12 cup slivered almonds

directions

  • Preheat oven to 350 degrees.
  • Butter a 1 quart casserole dish.
  • Drain peas.
  • In a medium mixing bowl, add Ranch dressing mix to soup and add this mixture along with cheese, to the peas.
  • Stir gently, but well.
  • Put into the prepared baking dish and top with slivered almonds.
  • Bake in pre-heated oven until almonds are toasted and casseroles edges are beginning to bubble.

I am a retired RN living in Charlotte, NC. My husband died in 2003 on July 4 so my only housemates are my two dogs, FuTu and Little Bit. My 3 children and their families all live within 45 minutes of me. I love to cook, and often send meals out to sick and elderly or families with new babies. I collect cookbooks, have about 500 but still love to check 'ZAAR daily for new ideas and recipes. The cookbook I use most often is called "Recipes and Remembrances" and has 1000 recipes compiled by my Sunday School class from church members--in compiling the recipes, each committee member included their on favorites so that we could use this as our main source for cooking.
