Dried Cherry Couscous Salad

"Unique picnic side dish. I've made this several times when bringing a side dish to summer barbecues. Every time, there's at least one person that asks me for the recipe. The original recipe also calls for 1 cup chopped onions, but I leave this out."

  • Bring broth or water to a boil in a medium saucepan; stir in couscous.
  • Cover and remove from heat.
  • Let stand for 5 minutes.
  • Uncover and stir with a fork until all grains are fluffy.
  • Let cool for 10 minutes.
  • In a large bowl, combine cooked couscous, dried cherries, carrots, and cucumber.
  • In a small bowl, combine vinegar, olive oil, and mustard, mix well.
  • Pour over couscous mixture and toss to coat.
  • Season with salt and pepper if desired.
  • Garnish with toasted almonds.
  • Serve chilled or at room temperature.

  2. Nice salad. I halved the recipe and chose to grate the carrots and omitted the nuts. Made for Everyday Holiday Tag game. :)

I was going to cut back on the amount I made, but then used the water instead of the chicken broth & gifted half of it to my vegetarian son & DIL, & they were thrilled with it! The only small things I did differently was to [1]shred the carrot & [2]use lemon pepper instead of the usual S&P! Another time I MIGHT include half a cup of diced sweet onion, but that doesn't change the fact that the salad, as you have it is very nice! Thanks for a great keeper recipe!   4. This is a very nice, healthy couscous salad recipe! The taste is yummy with the different veggies and the cherry adding a little fruity sweetness to it. All in all great for warm days as it is yummy, colourful and refreshing! Although I liked this a lot, I somehow thought something was missing tastewise. I cant put my finger on it, but I felt it needed something more. Maybe some cumin or curry? I will surely make this again and play around a little.
