- 12 chicken thighs
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper
- 1 cup pitted prunes
- 1 cup pimento-stuffed green olives
- 2 tablespoons capers
- 1 tablespoon dried Italian seasoning
- 2 garlic cloves, minced
- 2 bay leaves
- 14 1⁄2 ounces chicken broth
- 1⁄4 cup honey
- 1⁄4 cup cider vinegar
directions
- Place chicken in a large slow cooker; sprinkle with salt and pepper. Add plums, olives, capers, Italian seasoning, garlic and bay leaves. Pour broth, honey and vinegar over all in the cooker.
- Cover and cook for 5 to 6 hours.
- Serve with hot cooked rice.
