Dutch Almond Bread (Amandel Brood)

"There are many Dutch pastries and desserts made with almond paste. It's popular and delicious. This is a wonderful sweet bread recipe. The prep time includes soaking the cereal. Makes one very large loaf, or two loaves."

  • Soak cereal in milk for one hour.
  • Mix all the ingredients together when the cereal has been soaked.
  • Pour into a loaf pan.
  • Bake at 350 for about 1 hour.

  1. this recipe makes 2 full loaf pans, and was delicious. i sprayed the pans with cooking spray and they came right out. great almond taste. next time i may sprinkle the tops with sliced almonds for some extra crunch
     
  2. This is my first Zaar Review and I picked a 5 star recipe! This was great. I love almond paste, but hate to go to the work of using it in pastries. This got me my fix. I made two full size loaves, they weren't really tall, but the texture was still perfect. The outside has this great little crunch to it. This was easy to make too...a real winner PanNan!!

I liked this very much, but I felt it was missing an element--I don't know whether something as simple as some salt in the batter would do it, but there is, despite the lovely almond flavor, a certain blandness to the taste. I halved the recipe and the result was one very pretty full sized loaf. I will try again with the salt and maybe a bit of spice.
