Dutch-Style Potato Bake

"I found this recipe on the companyscoming.com website. The intro states that it is a dish inspired by a similar Dutch dish in which the ingredients are mashed together and eaten with sausage. In this quicker version, the ingredients are tossed together and baked tender to produce a flavorful dish featuring bacon, sauerkraut and tart apple as the highlights. (Metric measurements were given too, which are: 1.25L potato, 500ml apple, 375ml sauerkraut, 50ml cooking oil, 10ml Dijon, 2ml salt, 1ml black pepper, 30ml green onion.)"

  • Toss together the potatoes, apples, sauerkraut, oil, mustard, salt and pepper. Transfer to a lightly greased 9x13-inch (23x33cm) baking dish.
  • Bake at 400°F (205°C) for 1 hour, stirring occasionally, until potato and apple are tender and just starting to brown.
  • Scatter crumbled bacon and sliced green onion on top. Serve hot.

  1. Really good. My Polish parents used to make a similar potato dish, but theirs included kielbasa and did not include apples. I have to say, this dish tastes way better. The apples and the sauerkraut add a nice a tangy flavor to the potatoes, but it's not overwhelming. The bacon and the green onions are the perfect garnish. My potatoes took about 20 minutes longer to become tender, but it was worth the wait.

This site used to be awesome. It was at the top of its game when it was called Recipezaar, but that was many years ago. The site was purchased by Scripps and belly-flopped into mediocrity. A few of the faithful members remained, hoping to wait out the storm of corporate nonsense. But alas, it never got better and just continued on its terminal path to nothingness. So most of the loyal members have vanished and made homes at better recipe sites.
