Earl's Warm Potato Salad With Roast Corn and Bacon

  • Preheat oven to 425.
  • Dice potatoes in salad size pieces. Put them in a single layer on a cookie sheet.
  • Spread corn evenly over potatoes.
  • Spread chopped onions over potatoes.
  • Lightly smash garlic distribute cloves evenly through potatoes.
  • Drizzle liberally with olive oil and salt and pepper.
  • Toss to combine.
  • Roast until potatoes are cooked and crisp.
  • Cook and chop or crumble bacon, put aside.
  • Combine mayonnaise, sour cream, horseradish, lemon juice, dill, Parmesan cheese and salt (keep in mind bacon will add salt and potatoes have been seasoned) and pepper to taste.
  • After roasting with the potatoes remove garlic cloves. Mash them into a paste and add to dressing.
  • Toss roast potatoes, corn, bacon and dressing together. Serve warm. Leftovers are delicious cold!

  3. So good, and tastes just like the original! I made a tweak where I omit the olive oil, and just bake it with the chopped bacon. I also start it at 400° for half the time then bump it up to 425.

Tweaks

  1. I used to work at Earls, and one of our staff favourite substitutions was "pot salad fries" - the exact same recipe, but made with fries instead! I didn't have any potatoes, but did have fries in the freezer. Tastes just like the restaurant! So happy I found this copycat recipe.
     
  2. I omit the olive oil and cook it with the bacon directly on top. Works like a charm, and all the veggies get a delicious bacon flavour. Picture was taken as i put it in the oven.
