East African Braised Chicken

"This is a wonderful dish I found in "Cooking Light" magazine. This dish if full of flavor and despite all the ingredients, it is very easy to make. It's good served with rice and a flat bread. Braising in a this highly aromatic liquid yields an exceptionally flavorful and tender result."

  1. This took more like 1 hour 45 minutes to make than the 1 hour 10 minutes stated, but worth every minute. It was very easy to make. The aroma throughout the house was incredible and the flavor was even more incredible. We absolutely loved this, LeeAnn!

  5. This chicken was flavoursome, tender and very very easy to make. The only thing i did differently is adding about 3 cups of raw spinach towards the end and it was wonderful. I will certainly be making this again. Thank you for sharing a great recipe!

I'm 41y/o wife and mother of 2. I've been a nurse for 20 years. We live in a small town in Arkansas. My passion is cooking. I love to cook anything and everything. Luckily my family is adventerous in their eating habits, so I have lots of fun trying new things out on them. I also like camping, traveling, gardening, water sports and collecting recipes. I like getting to know other people from other parts of the world. We have 5 pets, 2 dogs and 3 ferrets. My worst pet peeve is when people stick their nose up at a dish before trying it, because they know a certain ingredient is in it. I know everyone has different tastes, but picky eaters just don't know what they are missing when they turn down a dish they havent even tried.
