  • 1 (16 ounce) jar jalapeno peppers, enough to cover an 8x8 pan
  • 1 lb grated cheddar cheese
  • 6 eggs, beaten

directions

  • Grease an 8x8 glass dish.
  • Cover the bottom of the dish with jalapeno peppers.
  • Cover peppers with cheddar cheese, and then pour beaten eggs over the top.
  • Bake 30 minutes at 350 degrees.

  1. WOW, what a great dish!!!! So easy, so quick and best of all soooooo yummy, too! :) I luved the heat from the jalapenos paired with the mellow cheese and eggs. A great combination! Ill try adding in some chopped bell pepper or beans next time Im making this. I cant wait, there are so many possibilities with this!   2. Holy Jalapeno Batman! This is definitely spicy but so good! I used a 12 oz. jar of jalapenos and added some granulated garlic, onion powder and black pepper to the eggs. There are so many possibilities of add-ins and using different cheese. I will be making this again! Thanks for sharing, weekend cooker. ***Made for PRMR***
     
  3. YUM!! I was a little skeptical, but this was so easy and so so yummy! I used fresh jalapenos (3 good sized ones). I also used a little mozzarella cheese along with the cheddar cheese since I did not have enough cheddar. This will be so good for breakfast on the go.

  5. I made this (scrambled) in 3 minutes using the microwave. Wow! I have heard of folks putting tabasco sauce on eggs, but this quiche is a killer! Good flavor, but next time I will add some seasonings as it was kinda bland. Maybe some salt/pepper/garlic powder and some bacon and onions. Something to spice it up. Made for a nice breakfast treat. Thanks for sharing the recipe.
