ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 celery ribs, chopped
- 1 garlic clove, minced
- 4 cups vegetable broth
- 1 sweet potato, peeled and diced
- 1 cup edamame
- 2 cups Baby Spinach
- salt and pepper
directions
- Heat oil in saucepan. Add onion, celery and garlic, till softened. Add broth, bring to boil.
- Add sweet potatoes, edamame, reduce to simmer, cook til tender. Stir in spinach till wilted. Salt and pepper to taste.

I love how healthy this recipe is, but it was pretty bland for us and I had to Dr. it up a bit. Maybe my sweet potato was too big, but I felt there needed to be something added to balance it's flavor. I added a pinch of dried thyme and a little balsamic vinegar. This will be nice to have on hand for a healthy snack or a light meal. Thanks for sharing the recipe.

Yes, this certainly is easy, and tasty too! I made this exactly as posted, except I also threw in some red kidney beans that I had leftover in the fridge. The edamame is a really nice touch, and this soup is guilt-free! One feels positively virtuous (and autumn-y) eating this! Made for Rookie Recipe Tag Game.
