Easy Awesome Crock Pot Sausage Pepper Onion Potatoes

"A friend gave me a recipe that required roasting in the oven, but I could never get it right. Instead I experimented with it in the crockpot and it is SOOOO good! Easy, hearty, cheap, and comfort food at its best!"

  • 2 lbs sweet Italian sausage
  • 2 -3 lbs red potatoes
  • 24 ounces frozen stir fry vegetables, pepper and onion
  • 2 cups water
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon sage

directions

  • Cut sausages and potatoes into bite sized chunks.
  • Dump all ingredients into large crock pot.
  • Cook on low 6 hours.
  • Drain liquid and serve.
  • Delicious!

  1. Cook according to directions. This makes a great do ahead meal; cook overnight for breakfast and brunch,or all day for dinner. Added the additional seasonings suggested by KB. Added 9 additional scrambled eggs for a heartier higher protein meal. Use a durable slotted spoon to serve individuals; also served with optional grated sharp cheddar & green onions. Yum!
     
  2. Add some oregano, sage, parsley and olive oil to add more flavoring.
     
  3. Love the fact that this is a quick and easy, throw together meal for busy days. I first put baby potatoes that required very little cutting in the bottom of my crock pot. I then chopped up a medium onion and two red bell peppers in place of the frozen vegetables. I used the Italian sausage I had on hand which was 1 package of Hot and 1 package of Mild turkey Italian sausage. I enjoyed the recipe as is however; all four of my kids told me they thought something was missing. You have given me a great recipe to play with. Thanks for posting.
