Easy Banana French Toast

"This is a simple and quick way to use those still good but aesthetically non-pleasing week-old bananas. I like to use a less dense, lighter bread with this recipe, like normal sandwich bread."

  • Mash the banana in a shallow bowl with a fork; mix it until most lumps disappear.
  • Scramble both eggs into the bowl along with the spices and vanilla extract.
  • Preheat a griddle or frying pan.
  • Use cooking spray or butter.
  • Dip slices of bread in mixture and transfer to pan.
  • Cook both sides until done.

  1. Are you supposed to add the mushed banana in the eggs because that's what I did and it turned out delicious!

  1. The list of ingredients says 1 egg but in the directions it says scramble both eggs. I would think it should be 2 eggs. Which one is it? The recipe sounds good but I won't try it until I know the correct ingredients.
     
  2. I had two of those "ugly" bananas to use up so I let my 5 year old mash them and I added a second egg and about 1/4 cup milk. In the end I just doubled the spices because I had essentially doubled everything else. lol We were able to easily make 6 slices of bread. My family LOVED this recipe. I added peanut butter as well as butter and syrup to mine. Delicious! I love that this recipe is really super easy to make, and what a genius idea for using up bananas! Thanks for sharing your recipe, DangerChef!

  5. This was a very nice take on French toast! Usually when bananas are involved they are stuffed inside two slices of bread with cream cheese or something then egged up and fried. So this is nice when we are in a bit of a hurry, comes together pretty fast!

Tweaks

  1. Absolutely delicious!!! Doubled the recipe, added about 1/4 cup to a 1/2 cup of milk and about a teaspoon of sugar to the batter. Probably didn't need the sugar if ther bananas were sweeter. But the kids raved! Will definately make again
     
  2. I went with the suggestions of some other reviewers and added a splash of milk to the batter because it was super thick, they turned out wonderful and I was able to make 6 slices from it! This had a great banana flavor but was not overwhelming at all. Served with peanut butter! YUM
     
  3. Instead of two eggs, I used one egg and a splash of milk. Also I was only able to make 4 slices from the recipe.
