Easy Banana Sheet Cake

"A great way to use up extra ripe bananas. Just mix them into a cake that's great. You can use a frosting or it's great without a frosting."

  • 1 (18 ounce) pkge. yellow cake mix
  • 1 cup mashed very ripe banana
  • 13 cup water
  • 13 cup oil
  • 3 eggs
  • 12 teaspoon almond extract or 1/2 teaspoon banana extract
  • 12 cup chopped chocolate-covered english toffee bars or 1/2 cup chopped nuts

  • In a large bowl, beat cake mix, bananas, water, oil, eggs and almond extract with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes.
  • Stir in chopped toffee bars or chopped nuts and pour into a greased and floured 13 X 9 inch baking pan.
  • Bake at 350 degrees for 35-40 minutes. Cool.
  • If frosting is desired, a chocolate or caramel frosting works well. If no frosting is desired, top servings with caramel topping and sliced bananas.

I iced mine with chocolate pan frosting (from The Cake Mix Doctor) and my whole family loved it and the next day my Dad took the remainde to work for his employees (all big men) and they have also reported that it was delicious!
