Easy Cabbage Rolls with Sauerkraut

"This recipe is so easy and people just love these cabbage rolls. Much of the flavor comes from the sauerkraut and tomato juice, so there is little else to it. I have substituted lean ground beef for half of the ground pork with much success."

  • Combine pork, rice, onions, pepper, garlic powder, salt and paprika in large bowl.
  • Steam heads of cabbage until leaves remove easily (about 5 minutes each in microwave along with 1/2 cup water, covered with plastic wrap works well) Take handfuls of meat mixture and roll up in cabbage leaves.
  • Place rolls in roasting pan.
  • After covering the bottom of the pan, top with half of the sauerkraut and half of the tomatoes.
  • Repeat with second layer.
  • Pour tomato juice over top.
  • Cover and bake 2 1/2 hours at 350 degrees.

  2. I made these cabbage rolls last night and we all really loved them. But I had a question about how long to cook them. 2 and 1/2 hours seemed like a long time. I took mine out after 2 hrs because it seemed too long. I will note tho that I had only one layer because my pan was larger. What amount of time is good for one layer? 1 hour? My ground beef kind of became hard instead of crumbles. Thank you, Patti

Hi, I added red cabbage sweet & sour cabbage from a jar, 2 slices of cooked bacon (chopped up), riced cauliflower (frozen package - sautéed) instead of rice, cilantro (minced), fire roasted stewed tomatoes, & chopped up cabbage instead of doing rolls. Then, I cook it in a crock pot overnight.
     
  2. I love stuffed cabbage and this recipe is so very good! My roaster is a larger one so I did not get two layers of cabbage rolls. I peeled the leaves off the head of cabbabe instead of steaming, used two cans of V-8 juice, and omitted the salt. With an hour left to cook, I quarted some potatoes and added those making sure they were covered in the sauce. The sauerkraut adds a very nice smokey flavor and the pork holds nicely together while roasting. Comfort food at its best!! Thank you so much for posting your recipe!!
     
  3. Turned out very tasty! Love the quick tip of microwaving cabbage. So much easier. Big crowd-pleaser at Christmas, tasted just like my Grandmother's.
     
  4. Have made similar recipe. Change sausage to 1 lb. Sausage and 1 lb ground beef. I love this recipe. I save the broth in the freezer to make minestrone soup. It is so good I can't just throw it out. Cabbage rolls freeze well also! You will love this.
