  • Heat oven to 375°. Brown ground beef until thoroughly cooked; drain.
  • Stir in 3/4 cup enchilada sauce and one cup of cheese.
  • Spoon meat mixture onto tortillas roll-up and place seam-side down in lightly greased baking dish.
  • Pour remaining enchilada sauce over top. Cover with remaining cheese.
  • Bake for 15 to 20 minutes or until cheese melts.
  • Serve with yellow rice and refried beans.
  • Garnish with sour cream, salsa, and lettuce.

  1. Absolutely love this recipe! So easy! I add some canned corn and a little extra cheese and then when I roll the enchiladas I heat a can of refried beans and spoon a stripe of beans across the tortilla before I put down the filling and roll them up. Just gives it a nice creamy texture and adds some flavor!
     
  2. We only use corn tortillas for enchiladas in Texas; would that be okay in this recipe?
     
  3. Really yummy - and really easy!! I'm not a huge enchilada fan but I enjoyed these. My husband is a big fan and LOVED them! I added tri-color peppers, onion and taco seasoning when browning the ground beef. Otherwise, made as directed. Will definitely make them again.
     
  4. I loved these simple enchiladas so much! I've never made them before with flour tortillas but I was pleasantly surprised! Served them with beans and rice and topped with lettuce, sour cream and salsa—A MUST because it takes them over the edge!

Tweaks

  1. I used Enchilada Sauce # 31811 and since I didn't have cheddar cheese I used mozzarella. I also used Tofu crumbles instead of beef since I keep kosher and we cannot eat cheese with meat. I'm sure it tastes great with the meaty taste, but I've never had an enchilada before and this was FANTASTIC!!! Thank you for the recipe I will be making it again for sure!
