Easy Cheesy Red Beans and Rice

- 2 tablespoons oil
- 3⁄4 cup green bell pepper, diced
- 1⁄2 cup onion, diced
- 1 garlic clove, minced
- 1 bay leaf
- 1 -2 teaspoon salt
- 1⁄8 teaspoon pepper
- 1 (15 ounce) can diced chili ready tomatoes (do not drain)
- 1 (15 ounce) can kidney beans (do not drain) or (15 ounce) can pinto beans (do not drain)
- 4 cups cooked brown rice
- 1 cup sharp cheddar cheese, shredded
- sour cream (to garnish)
directions
- In large skillet heat oil on medium heat. Add green peppers, onions and garlic. Cook until tender.
- Add salt, pepper, bayleaf, diced tomatoes and beans. Simmer 20 minutes on low.
- Remove bay leaf, mash about 1/2 of the beans and tomatoes.
- Add rice, stir until combined.
- Sprinkle on cheddar cheese, cover and allow to cook on low until cheese is melted.

I really changed this too much, I think, for it to be the same recipe, but 5 stars for the great idea! I subbed based on what was in the house for a quick dinner. Left out the green pepper, used black beans that were drained and rinsed, and to get the liquid back I added a can of cream of celery soup while it simmered. Had a 10 oz can of tomatoes with green chilies so I used that instead of the chili ready tomatoes and added chili powder, cumin, and a touch of thyme. Also added about a cup of frozen corn kernels and about half a pound of smoked sausage to please my meat eater husband. Like I said, lots of changes, but I wouldn't have even had a base idea of how to make this without your recipe, so thanks! This took 50 minutes from start to finish, including the time to cook the rice, so a really simple, quick, easy dinner.
